A Cork company is sizzling up Ireland’s first ever Absinthe Sausages

Bored of your usual bangers?
If it’s time for your weekend fry-up to get a bit of a spirited upgrade, head for the English Market this week.
Cork sausage slingers O’Flynn’s Gourmet Sausage Company have just unveiled their latest invention: Ireland’s first ever Absinthe Sausage, the Lucifer.
“This one is something special! We have teamed up with our friends from Rebel City Distillery who are Ireland’s only producer of absinthe, to create this unique sausage.” the O’Flynn’s crew announced on social media.
This isn’t your average saussie, folks. These bold bites promise a unique flavour profile, infusing traditional sausage with the herbal complexity of absinthe, the notorious “green fairy” liqueur.

Harissa, red chilli, and garlic are also added to this gluten-free creation, resulting in a delicious sausage that’s supreme served in a fresh bread roll with your choice of toppings.
If anyone can make it work it’s these guys; past creations have included whiskey sausages, cider sausages and even gin sausages.
Try the new flavour in The English Market this week.
