This Cork hotel is *the* spot to bring a sweet-toothed friend this summer

If your ideal summer evening involves something sweet, something sparkling, and sitting somewhere seriously pretty by the water, you’re going to want to take note of this.
The River Club is rolling out Sundaes & Spritz for Summer 2026, and it’s giving full Italian aperitivo energy.
Created in collaboration with Scúp Gelato and Fox Flowers Cork, the terrace has been designed as a proper summer escape — all fresh blooms, soft light, and river views made for lingering. The menu is keeping things simple but very effective: four signature spritzes, each paired with seriously indulgent gelato sundaes.

Grab a seat on the sunny terrace and dive into the spritz menu.
Go for The ‘Pana’ Loma (€14) — Olmeca Altos Blanco, lime, and pink grapefruit soda — basically sunshine in a glass. Or try The Last Port of Call (€13) — Boatyard gin, white port, cucumber and basil syrup, Prosecco and soda… very “I’m on holiday even if I’m just in Cork city” energy.
Ask for two spoons for the River Club Signature Sundae (€10), pure over-the-top joy: raspberry jelly, vanilla custard, Scúp Irish gelato, crème chantilly and chocolate blondie. Or keep it cheeky with a Whoopsie Daisy (€6.50); dropped vanilla and cherry gelato, chocolate crunch and crushed sable biscuit.
Messy, dramatic, delicious.
And if that wasn’t already convincing, Thursdays from 6pm are officially aperitivo nights — meaning if you order a cocktail, you’ll also get complimentary Scúp gelato. Glee!
Basically: spritz in one hand, sundae in the other, and no reason to rush anywhere.
