Sink into summer with dinner under the trees at the lush new Canopy Restaurant and Bar

Brought to you by the Castlemartyr Resort.
Summer will be over in the blink of an eye.
But with a few more weeks of sunny afternoons and balmy evenings stretching out before us, now is the time to take some time out and savour the season in style.
If you’re on the hunt for an extra-special venue and a truly memorable meal, the five-star Castlemartyr Resort is a reservation creating plenty of buzz right now.
The latest addition to the tempting array of dining venues on the resort is Canopy, the hotel’s lush new contemporary restaurant and bar.
Whether you’re celebrating an anniversary, a homecoming, a big birthday, a holiday or a Tuesday, take a table in the leafy shade of the beautiful mature trees overhanging Canopy’s extensive outdoor dining terrace and let Executive Chef Kevin Burke wow you with the best of local produce and Irish cuisine.
What’s on the menu?
Lunch is a delightful mix of fresh, light dishes such as the house chowder with salt cod crostini and Red Chicory Salad served with black radish, avocado, and pomegranate – perfect if you’re heading to the resort’s luxe Spa for some pampering afterward.
Those seeking some extra sustenance before exploring the vast grounds will find it in Ms Quinn’s Picnic (chicken, rocket, and wholegrain mustard on brown bread, served with soup and something sweet – a bargain at €17).
You can also sample the hefty Murphy’s Burger or the local Spiced Beef on Grilled Sourdough, served with pickled cabbage, salad and fries. Check out a sample Lunch menu here.
Dinner guests who plump for the €69 Chef’s Menu will enjoy an amuse bouche and starters such as Ballycotton Smoked Haddock served with crispy egg and smoked velouté and Guinea Fowl Terrine with Caesar dressed cos lettuce, brioche crouton, and bacon.
After a Champagne sorbet to cleanse the palate, the experience continues with West Cork Chicken, crispy leg, sweetcorn, breadcrumb, and Madeira jus or Barbequed Castletownbere Monkfish served with mussels, kohlrabi, asparagus, chard, and samphire.
No memorable meal is complete without dessert; we recommend sharing the Paris Brest with hazelnut and Guinness ice cream and a Chocolate Marquis with poached pear and pearl barley sorbet. Tea and coffee over petit fours will round off a decadent evening quite nicely.
With a distinctly relaxed atmosphere and bright, natural décor, Canopy is a striking venue for a catch-up with friends and family.
It’s also an exceptional setting for business clients to take a break from on-site conferences and enjoy an informal lunch meeting away from the office.
If you’re planning your stay at Castlemartyr Resort in the coming weeks, don’t miss the sublime Afternoon Tea, served in the Manor House. Make sure you stroll over to The Hunted Hog, Castlemartyr Resort’s traditional Irish pub in the village too – their hearty dining menu is served all day.
