It’s almost a shame to eat it.
A Ballincollig-based baker has been making jaws drop online with an enormous three-tier Cork-themed cake created for a very special birthday.
Master confectioner Tracy Desmond Bell of Trace of Cakes dreamed up the nostalgic concept especially for her mum, who celebrates a big birthday this week.
“I had no idea what kind of cake I was going to make, so last minute decided on one about her life; where she grew up in Churchfield Terrace on the Northside of Cork City, to Ballincollig,” Tracy explained.

The cake, which took ten hours to craft, features hand-painted landmarks from all the neighbourhoods her Mum has called home down through the years, complete with artful terraced houses, neat lawns and street signs.
“I painted our family home as well as the house in Churchfield. Telecom right at the top, Shandon and the North Cathedral as well as Ballincollig Castle, Regional Park and the Weirs,” added Tracy, who has been baking professionally for eight years.
“I opted to include my most popular flavours in biscuit cake, as they last much longer than sponge cake; my triple chocolate creme biscuit, Biscoff biscuit and my award-winning white chocolate and raspberry biscuit cake.
Predictably, the personalised gift went down a storm.
“She couldn’t believe I had handpainted the family home and the Northside of the city where she grew up. It holds a lot of memories for her, as she made her Communion and Confirmation in the North Cathedral, which was handpainted too.” said Tracy.
It’s not the first time the talented baker has pulled out all the stops for a family occasion – in 2018, she (literally) rolled out a custom golf club cake created especially for her dad’s 70th birthday.
