Lilly Higgins’ hummus recipe is the only one you’ll need

By Yay Cork January 23, 2018July 18, 2018

Hummus; one of the only truly healthy foods that tastes just naughty enough to enjoy.

If you’re still buying yours pre-made however, you’re missing a trick.

Homemade hummus is infinitely better than the shop-bought version. Not only can you make it to your exact taste, you can also ensure it’s completely free from preservatives and other nasties.

All you need to whip up a batch is a blender, a can of chickpeas, some garlic and a lemon or two.

There are countless recipes online, but our favourite comes from Cork chef and food writer Lilly Higgins. Her secret? Instead of the traditional tahini, she uses two tablespoons of sesame seeds soaked in the juice of one lemon and a splash of chickpea water (the liquid that’s in the can with your chickpeas) for about ten minutes.

Sharing her recipe on Instagram, Lilly writes: “I make mine with a dash of chickpea water from smoothness, loads of lemon juice, a clove of garlic and generous pinch of crunchy sea salt. Instead of tahini I soak sesame seeds in cold water (got this tip from @forksoverknives cookbook!?) and blitz everything together in the @nutribulletuk Keep in a jar in the fridge for dipping into during the week.”

If you don’t have tahini or sesame seeds, a dollop of peanut butter works well too. Either way, we’ll be keeping a pot in the fridge at all times to help beat our sugar cravings.
