A Cork restaurant has planned a meaty feast like no other for Valentine’s Day 2020, with a menu of ‘nose to tail’ dishes employing some of the lesser-used cuts.
The Glass Curtain on MacCurtain Street just unveiled its Bloody Valentine’s dinner menu; a selection of recipes involving ingredients such as beef heart, pork skin, and bone marrow.
A lesson in consuming meat more consciously, nose-to-tail cooking makes mouthwatering meals from secondary cuts.

While the fillet and other primary parts of an animal are usually the stars of the show, chefs agree that the bits we’ve been trained to ignore are often the most flavourful, especially when they’re expertly stewed, grilled and fried by somebody who knows what they’re doing.
“We believe that to show the proper love and respect to any animal you are going to eat, nothing should go to waste.” they say. “When shown some care, some of the lesser-used cuts are the most delicious.”
The menu (€50pp, booking open here) will be available on Valentine’s Day, Friday, February 14th, 2020.
