Three Cork chefs sharing the best ‘I can handle that’ recipes

By Yay Cork January 20, 2025

We’ve all been there.

You know that moment when you stare at a recipe and think, Nope. Absolutely not. Too many steps. Too many ingredients. Too much commitment. You’re already mentally exhausted before you even get the garlic out.

Happily, three of Cork’s finest Instagram cooks are firmly focused on serving us recipes we can actually achieve using ingredients you can usually buy in the local shop.

With these recipes, the only thing you’ll need to worry about is whether you’ll have enough leftovers for tomorrow’s lunch.

Here are three Cork cooks to follow now:

Rachel Jean Hornibrook

Rachel has amassed an enormous following who can’t get enough of her straightforward, simple recipes. While the odd decadent savoury supper does make an appearance, this is the feed to refer to when you’re in the mood to bake something incredible for friends or family or you need a clever idea for the school bake sale.

Her Peanut Butter Cup Bar recipe makes 16 outrageously good servings – try it and you’ll wonder why you ever bought a pre-packaged treat in the shop. Other heavy hitters are the five-ingredient Biscoff Cups and the Chocolate and Sea Salt Oat Bars.

Trisha Lewis

We’ve been huge fans of professional chef Trisha’s easy healthy recipes for years, but we’ve been bookmarking her hearty low-calorie family favourites more than ever in the recent spell of freezing weather.

Scroll right back and bookmark Trisha’s Slow Cooker Lasagne, Pork Mince Noodle Broth and Simple Omelette now. And don’t forget to screenshot the Funeral Soup in her Stories while you’re there.

Val Keane

Val Keane, aka @cork_cook, works as a pharmacist by day and started his Instagram feed as a hobby during the lockdown from his home in North Cork. “My aim is to make the recipes as easy to follow as possible, with ingredients that everyone will have. I like to focus on fake-aways, air fryer and slow cooker recipes.”

His Slow-Cooker Mango Curry and Loaded Taco Air Fryer Potatoes are the kind of big-batch comforting recipes you’ll come back to again and again. Oh… and if you have any leftover festive sweeties lying around, his Selection Box Cookies are *chef’s kiss*.
