This pop-up dinner is happening on a free-range farm just outside Cork city

This might be the ultimate farm-to-fork event.
Glenbrook Farm started out as a small dairy farm on the edge of Cork City and the property has been in Peter Twomey’s family for three generations.
After a close call with a Donedeal advert in 2001 when he found himself with a load of pigs and no buyers, the farmer decided to stick with it and give pig farming a go.
It worked out. Since then, Peter has collaborated with Ballymaloe Farm, is selling to O’Mahoney’s Butchers in the English Market, and supplies several Cork restaurants with his free-range pork.
Now, the ambitious Corkman is taking things to a new level with the help of Fota Island Resort’s head chef Maris Urbanovics, winner of Ireland’s Chef of the Year at the Hotel and Catering Review Gold Medal Awards in 2022: a pop-up restaurant with a six-course taster menu.
“We are serving a six-course tasting menu that can be paired with wine. Most of the food comes from the farm: Pork, vegetables, honey, milk,” said the chef.

“I have been working with Glenbrook farm products for the past two years and I believe they are amazing. We want to make more awareness about local produce that is on your doorstep,” he added.
Peter will also speak about how he rears his pigs in an outdoor free-range, high-welfare environment, and diners will get to explore where vegetables are grown and sample the farm honey and fruits foraged from the hedgerows.
The Glenbrook Farm Pop-Up Restaurant in collaboration with Maris Urbanovics takes place on Saturday, September 16th at 7pm to 11.30pm and tickets are €100.
