This Cork cookie maker has a genius hack for making ice cream sandwiches

When it comes to ice cream, we’re always ready for a few scoops.
Now a local baker has shared an intriguing new way to serve your frosty dessert treat and we must say, it’s pretty genius.
Run by Ballymaloe graduate Sarah Cremin, Good Fortune Cookies delivers thick double chocolate, caramel, hazelnut, peanut and honeycomb cookies by the boxful.
We didn’t think they could be improved on, to be honest… until they shared a simple hack for turning them into ice cream sandwiches.
All you need is a tub of ice cream, a sharp knife and a steady hand, as demonstrated in this video:
