Hello Hansum! A juicy new chicken joint is now open at Cork’s Marina Market

His opening weekend was a sell-out success.
Now Colin Ryan, owner of hot chicken mecca Hansum, is prepping his rotisserie at Cork’s Marina Market for an extremely clucking busy May bank holiday.
Hansum’s simple menu is all about the bird; moist, juicy, slow-cooked meat and crispy skin; both prime ingredients for one of the best sandwiches in the city.
There’s a full or half rotisserie chicken (€12/€7) and the Hansum Ciabatta (Arbutus bread, pulled chicken, grated cheese, pickled onion, tomato concasse, baby gem, and piri-piri mayo – €7), all going down a treat at the Centre Park Road venue. You can throw in some wedges too if you’re ravenous.

It might be his first solo venture, but Ryan is a chip off the old block; he comes from one of Cork’s best-known foodies families. In fact, his grandparents Declan and Patsy Ryan ran Ireland’s first-ever Michelin star winning restaurant, for Arbutus Lodge.
“As a local Cork man coming from a family rooted in Cork’s food and hospitality industry, I’ve always wanted to open my own food business in Cork. My grandfather opened Arbutus Lodge in Montenotte, my uncle owns Arbutus Bread and my parents are the owners of Isaacs Restaurant, so carrying on the tradition means a lot to me.”

Like many of the city’s newest entrepreneurs, Colin found the pandemic served as a catalyst for a new beginning.
“I decided to use the opportunity of being unemployed during the pandemic to put my time to good use and finally create my own brand,” he said.
“Hansum is a fun brand that wants to make simple food delicious. Rotisserie chicken is something I’ve always loved and wanted to be part of my first brand. The support we’ve received so far has been insane and we can’t wait for what’s ahead.”
Hansum opens at 12pm at The Marina Market on Centre Park Road until they sell out.
