Cork’s newest sandwich shop is open and they are not playing around

Happy Days is right.
There are few things that make us happier than a whopper sandwich… and Cork’s newest sandwich shop is bringing the goods.
Opening today on Penrose Wharf in Cork City, Happy Days is a brand new venture by four pals from all corners of the Cork hospitality world.

Their speciality is roast sandwiches, which you can enjoy alongside delicious coffee, quality bakes from Alchemy and a simple breakfast menu.
This is an all-star team that includes John Barker: former head chef at Good for the Soul, Aidan Roche chef, and owner of Poulet Vous, Chloe O’Leary: former manager of Market Burger and Chris Curtin, former head chef of the Oyster Tavern.

Even the striking green and white branding was created by Cork-based Studio LRA.
“The concept is simple: a rotating menu offers a choice of four sandwiches per day,” John told Yay Cork.
“Kicking off with the Buffalo Chicken, Meatball, Grilled Cheese and signature Porchetta; each served on a fresh baked ciabatta (Cuthberts), with some delicious extras, all made in-house: from our punchy hot sauce to zesty gremolata.”

Coffee is from Stone Valley Coffee; kicking off with their Brazilian bean, Clonakilty-roasted, and served with Galvins Farm Milk from Kilbrittain by barista, Ciarán Shanahan.
Customers can expect to be greeted by a blast of slow-roasted porchetta and the sight of crispy crackling lined on wooden chopping boards.
The spacious set-up allows for quick grab-and-go lunch service but you can also kick back, meet friends and stay a while with 26 seats inside and another 12 outside.
Menu offerings include gluten-free and vegan choices too. Happy Days is now open Monday-Friday from 8am to 3pm.
