Cold Cuts is the new Cork bar and restaurant to get excited about this summer

By Katie Mythen-Lynch February 16, 2026

The address is being finalised.

But every other tasty little element that will greet customers at Cork’s newest bar and restaurant has been long pored over and planned by the two talented gents behind it.

Cold Cuts, a new venture by seasoned bar managers Alex Earle and Oisín Wolfe, will open in Cork City Centre this summer.

The boys have been running pop-ups for the last few years, starting out in Cork and going as far afield as Brooklyn and Berlin in the last year, testing as they went. Now it’s time to make a go of it right here on Leeside. Lucky us.

“Cold Cuts is most easily described as a blend of French bistrot and Italian American deli, wrapped up in Irish warmth.
We aim to open a 40 seater venue, with a patio when the weather allows it!” Oisín told Yay Cork.

Guests can expect a weekly evolving drinks menu focused on accessible flavours and ingredients, with a familiar food offering to accompany.

“We’re going to be opening in the City Centre, just trying to finalise on a site and start the work on it right now.” he added.

They’ve been busy…

Don’t let their youthful appearances fool you. These two have more experience than you can shake a Martini at.

Earle got his start in the industry at the Stella Cinema in Rathmines, Dublin, climbing the ranks to back-of-house manager before finding his way down to Cask in Cork. After spells in Vancouver at the Michelin Guide recommended Bar Susu and in Montreal as Prep Manager with North American Top 50 bars: Bar Bisou Bisou, The Coldroom and El Pequeno, the time came to return to his adopted home, and alongside his business partner Oisín Wolfe, open their own venue.

Wolfe also started bartending in Dublin, before moving to Boston to take the next step in his career, where he received an education in cocktails and hospitality at The Hawthorne, later opening and managing Paladar on Bridge Street in Cork with Andy Ferreira.

He’s just returned from two years in London where he worked as Beverage Manager of the critically acclaimed A Bar with Shapes for a Name (🔸🟥🔵).

A taste of what’s to come

There’s more good news. To re-connect with their guests in Cork and to promote the bar ahead of the opening, Cold Cuts will be taking over the upstairs bar of The Liberty on North Main Street later this month.

Expect new drinks every week with a food menu flip half way through. It’s walk-ins only (5pm-11pm).

The dates are:

  • February 22nd, 23rd, 24th
  • March 1st, 2nd, 3rd
  • March 15th, 16th, 18th*.
  • March 22nd, 23rd, 24th.

*The 18th is an industry night for all the hospitality folk who had a tough St. Patricks Day.
