Chef Victor Franca is hosting a tasty dinner pop-up in Ballincollig

Clear your Saturday — you’re going to want to be at this table.
On March 7th, chef Victor França is taking over Good for the Soul in Ballincollig for a one-night-only Supper Club, and let’s just say the menu isn’t playing around.
The €65-a-head, five-course set menu will kick off with a snack of chicken liver parfait, brown butter, grilled focaccia and beetroot marmalade before a starter of Seafood Moqueca “beurre blanc”, Irish trout, prawns, clams, and roasted cauliflower puree.
Next up is the main event, slow cooked beef ribs, creamy barley, wild garlic and parsley purée, with greens and ssmoked garlic roasted baby potatoes.
And for dessert? That spring favourite; forced Irish rhubarb, oolong tea mousse, local honey, and vanilla gelato.
“We’re delighted to welcome Chef Victor França back for another special Supper Club on March 7th.” the GFTS crew announced on social media.
