Chef Caitlin Ruth is heading to Kinsale this summer for a three-week Mexican pop-up

Good news, then, that chef Caitlin Ruth is back at Blacks Brewing & Distilling in Kinsale later this month for another three-week pop-up titled Mexico X Wild Atlantic Way.
Ruth and her team are set to return for a limited summer residency, bringing a vibrant fusion of Mexican flavour and West Cork character to the table from Wednesday, June 17th through to Saturday, July 4th.
The pop-up will take place from Wednesday to Saturday each week, offering a short but highly anticipated run for food lovers looking for something a little different.

The event promises bold, colourful dishes inspired by traditional Mexican cooking, reimagined with fresh local ingredients and a distinctly Cork edge. Expect vibrant plates packed with heat, freshness and creativity, alongside a menu of expertly crafted Mexican-inspired cocktails served fresh at the bar.
With limited availability and only a handful of nights each week, this one is expected to book out quickly — making it one of the more in-demand food events of the early summer season.
