A low-calorie mushroom soup to help you get back on track for 2019

Everyone goes a little wild with the brandy cream over Christmas, but the key is to get back on track as early as possible in January.
Happily, you don’t have to endure a starvation diet to undo any festive weight gain.
Cork health and fitness blogger Trisha Lewis has been sharing the tasty recipes that have helped her lose more than 89lbs since April… and her mushroom soup recipe is a decadent dupe for a calorific favourite.

A mushroom, parsnip and thyme blend, it’s vegetarian and vegan friendly and with roughly 500 calories in the entire pot, it works out at about 50 calories per bowl.
Ingredients
3 breakfast flats (the really big mushroom)
1 large punnet button mushrooms
3 low salt stock cubes
3 parsnips
1 bunch thyme
1 tin low fat coconut milk
1 tsp mustard powder
1/2 bag frozen onions or 2 onions
1/2 tub frozen garlic or 8 cloves
Method:
1. Chop all your veg. In a pot, sweat off your onions and garlic. Add chopped parsnips and a cup of water.
2. Cook that out for 5 minutes. Add your mushrooms. Add water to about 3/4 of your way up the veg. Add your stock cubes. When the veg is soft and simmering, add your tin of coconut milk and some black pepper.
3. Blitz and serve!
As head chef at Jacob’s on the Mall, Trisha is responsible for the menu at one of Cork’s best restaurants so you can be guaranteed her skinny soups are better than the usual low-calorie fare.
“Chop your veg small so it cooks faster.” says Trisha. “Black pepper is nicer than white in this soup. Mushrooms are full of water and can be deceiving – you might think you have loads but they shrink down! Use less water and more mushrooms. Keep the water level and inch below your veg when cooking.”
