For many, it’s the tangy taste of spring.
As the days get warmer, the lush East Cork gardens of the Castlemartyr Resort are bursting with rhubarb, which would usually be transformed into cakes, pies and jams in the hotel’s five-star kitchens.
This year, however, the Covid-19 restrictions have meant that the first crop would have gone to waste… so the team came up with a generous treat for locals instead.
Anyone living within 2km of the Castlemartyr Resort gardens can swing by and collect a big bunch of fresh rhubarb from outside the main gate.
If rhubarb is an ingredient you’ve never attempted to cook before, now is the perfect opportunity to give it a go. The Castlemartyr Resort has even shared a delicious recipe for rhubarb crumble, shared by their General Manager’s mum, Mary.
The idea has been a huge hit already, with dozens of happy home cooks posting their gratitude on the hotel’s Facebook page.
