Some would argue they’re the best bit about the festive feast.

But if you’re at a loss as to how best to use up your Christmas dinner leftovers, Instagram influencer James Kavanagh has come up with a distinctly ‘Cork’ sandwich recipe to enjoy on St Stephen’s Day.

James, who is a Ballymaloe trained cook, has created five lip-smacking sandwiches with Heinz [Seriously] Good Mayonnaise, “to make your leftovers the most anticipated meal of your Christmas culinary calendar”.

One of the options is a tantalising Cork Reuben (named after James’ “second home”) involving traditional Cork spiced beef, cheddar, sauerkraut and pickle on sourdough with lashings of mayo and mustard.

As James says, “it’ll spice up your Christmas life.”
