Want to turn your pumpkin into lunch? This Halloween soup demo will show you how

We always say we’re going to make the soup.
Inevitably, however, the whole damn pumpkin ends up being thrown away because, quite frankly, we don’t know how to make soup from Halloween’s star vegetable.
But this year, Togher Community Garden is organising a pumpkin-soup-making demo to teach us how to tackle, cut, cook, and serve the perfect hearty dish.
The community garden, awarded the ‘Best Amenity Project Cork City’ prize at the Pride in Our Community Awards earlier this week, is committed to teaching sustainable food practices that are kind to the earth and the pocket.
And with tonnes of hollowed-out pumpkins set to be thrown in the bin just shortly after Halloween, the group has set out to teach Corkonians how to make the most delicious pumpkin soup… and to save the seeds to roast with spices.
The demo will be part of the group’s usual Saturday Sowers event, where people from all over the city come to help with the garden or potter about before snacks, cakes, and afternoon chats.
