Macaroni and cheese are two ingredients that are not designed to be good for your waistline. However, when times get tough, especially as tough as they are now as we wait out this eternal lockdown, sometimes a hefty helping of comfort food is just what the doctor ordered.
There are plenty of people who know this to be true. In fact, when the legendary chef and cookbook author Ina Garten shared her recipe for Overnight Mac & Cheese, so many hungry readers descended on her website that it immediately crashed.
Now the site is back up and running, we’ve finally got our hands on the recipe and yeah; it’s an absolute triumph.

The best bit? Instead of faffing about making a bechamel sauce, you simply fling the sauce ingredients into the cooked pasta and leave them to soak in the fridge overnight.
The next day you pop the mixture, some more cheese and an awe-inspiring amount of butter into a dish, add some breadcrumbs and bake in the oven for 25 minutes.

Here’s what you need:
Salt and freshly ground black pepper
250g elbow macaroni
3 cups heavy cream
2 cups grated Gruyere, divided
1 cup grated sharp white cheddar
¼ teaspoon ground nutmeg
2 tablespoons melted butter, plus extra for the dish
1½ cups bread crumbs
