This new food truck puts a pure Cork twist on the taco

Breakfast on the beach just got a whole lot spicier in Rosscarbery.

Cork’s most exciting new food truck has taken to parking up on Sunday mornings, with a Mexican-inspired menu that will blow your socks off.

Sharon McSweeney’s Soul Fix is where Mexico meets Macroom.

The star of the pulled pork taco is Caherbeg Free Range Pork, fresh from Rosscarbery in West Cork. Topped with pickled red onion, guacamole, sour cream and a squeeze of fresh lime, it’s served in authentic Blanco Niño corn tortilla.

Leave room for a corn taco filled with Johnny Lynch’s buffalo halloumi, produced in Macroom using the milk of Ireland’s first and only herd of milking water buffalo.

Soul Fix add a smoked tomato salsa, a dollop of guac and a spoon of sour cream to create a bite so special you’ll want to take some home.

They also serve the halloumi with watermelon, mint and lime on the canape list, alongside a crunchy nacho topped with Rosscarbery chorizo and a mixed cheese and jalapeno quesadilla.

“I started working with food at a young age, trained as a chef and always dreamed of having my own place or restaurant – the food truck was never at the top of the list, I saw them as fast food and West Cork was well covered in that regard.” the chef revealed.

McSweeney is well known in West Cork food circles; she worked in Deasy’s Seafood in Clonakilty for a decade, chipping in at various local farmer’s markets too over the years.

“I was always dreaming of bringing all these local people and produce together.” she told Yay Cork.

“After a couple of years of soul searching and learning about the connection between our gut health and mental health, I grew the confidence to give it a go. I bought a funky truck, gathered all my favourite West Cork produce and put a Mexican theme on it.”

After just four weeks of road testing, Soul Fix is already booked for a wedding and a flurry of summer parties.

In between, Sharon will be setting up at at Warren Beach in Rosscarbery once again this weekend on Sunday (9am-1pm) for breakfast.
