But already, Sunshine Primo is back in the kitchen doing what he does best.

Fresh off a trip to Mexico, the Cork chef and pop-up favourite is bringing a wave of flavour (and serious hype) to Bakestone on Perry Street for a one-night-only event that’s shaping up to be a big one.

Tiger Balm Club X Chido Presents Cinco De Mayo is landing on Saturday, May 9th from 7:30pm, and if you’ve been to one of these before, you’ll know the drill: limited tickets, big energy, and absolutely no messing when it comes to the food.

Sticking to their “all killer, no filler” ethos, the team is serving up a five-course menu packed with dishes inspired by Sunshine’s recent travels — think aguachile, ceviche, handmade chorizo and plenty more, spanning flavours from Baja all the way to Mexico City.

And it’s not just about the food.

“We are also excited to team up with Chido for the official launch of their Irish made Mexican style lager.” Sunshine told us.
