Sneak Peek: This is the menu for tonight’s Cork Chocolate Dinner

If you dream in chocolate, your biggest fantasy is about to be brought to life.
Cork International Hotel hosts its annual Cork Chocolate Dinner dinner tonight, with guest chefs cooking individual courses… each and every one featuring chocolate in a subtle way.
Intrigued? Here’s a sneak peek at tonight’s menu in all its chocolatey glory:
- Starter (Chef Bryan McCarthy of Greenes Restaurant)
Celeriac, parsnip, artichoke, Ballyhoura Mushroom & bitter chocolate
- Main Course (Chef Martin O’Mahony)
Roast fillet of beef, smoked shallot soubise, chocolate nib, red cabbage and pulled beef marmalade, port reduction
- Dessert (Chef Paul Kelly, The Merrion Hotel, Dublin)
Milk Chocolate passionfruit cremeux, poached mandarins and chocolate ice cream
- Petit Four (Master chocolatier Paul A Young)

The dinner is part of the Cork Chocolate and Baking Weekend (November 23rd to 25th). Chocolatiers and bakers from Ireland and abroad will host a weekend of events and workshops centred around chocolate.
World renowned chocolatier, Paul A Young will be flying in from London and will be taking part in events over the weekend alongside Paul Kelly, Executive Pastry Chef from The Merrion Hotel and judge on The Great Irish Bake Off.
