This pure Cork hot sauce is the only thing to slather on your burger

If you’re a hot sauce aficionado there’s a brand new bottle to add to your spicy condiment collection.
And this one’s got a distinctly Cork flavour.
Fire in the Dance is a sweet and smoky sauce concocted by the folk at RockSteady Food Co.
A year in the making, the sauce is a delicious, vegan-friendly blend of chipotle chilis and Rising Sons’ Handsum IPA -a malty medium-bodied beer with a distinct hoppy, citrus grapefruit and pine aroma – which is brewed on Cornmarket Street.

Born out of a love of Caribbean and South American food RockSteady Food Co. began in 2017 with a mission to bring a taste of the islands to Ireland.
The duo behind the brand, Conor Lyons and Aaron Comerford, honed their recipe by hosting pop-up Cook Out parties, complete with a Reggae BBQ at Cork’s first annual Ska & Reggae festival.
‘Fire in the Dance was something we developed as the perfect accompaniment to our jerk chicken, beef and vegan burgers for our pop-up events,’ says Conor.
‘It proved so popular that we decided to bottle it!’
As the name suggests the sauce is quiet fiery, but it won’t blow your head off: ‘Fire in the Dance sits squarely at the “medium” point on the heat scale.’ Conor adds.
Happily for thrill seekers, the boys are already developing their next sauce, already labelled ‘Jamaican me Crazy’ – an eye-watering blend of locally grown habanero chilis and sweet banana.
In the meantime, Fire in the Dance hot sauce will be officially launched on January 22nd (World Hot Sauce Day) in Rising Sons Brewery. There’ll be plenty of samples to try on the night and a special RockSteady Jerk chicken and pineapple pizza on the menu at the Rising Sons pizza bar.
You’ll be able to pick up Fire in the Dance at Mr Bells in the English Market at €5 a bottle.
