One of Cork’s most exciting coffee shops is planning to open at night on select weekends to treat customers to a carefully curated menu of delicious cocktails.
The Collector on Market Lane in Kinsale will launch weekend cocktail nights on May 31st and serve drinks from 5pm to 9pm every Friday, Saturday and Sunday thereafter, making it the ideal spot for a pre-drink before your dinner plans in Ireland’s gourmet capital.
The café has just celebrated one year of serving up global-inspired craft coffees and experimental beverages alongside artisan goods and gifts.

“We’re shaking it up a bit more by introducing creative low and no alcohol cocktails to the experience.” owner Shannon Healey told Yay Cork.
“You can expect flavoursome adaptations of classics as well as totally original recipes, infused with the care and attention that’s made The Collector a fan favourite. A selection of small bites and desserts will also make the lineup.”
In the meantime you can hit The Collector for all your caffeination needs during the day – we’re vibing on their new Cocoa Hazelnut, a take on the mocha made with homemade chocolate sauce and organic hazelnut syrup, expertly blended with Arches espresso and steamed milk with a roasted hazelnut dust and cocoa on top.
