Tired of the same old Christmas traditions? If sour cherry mulled wine fermented soda and cranberry sauerkraut sounds like the menu update you’re craving, an upcoming Christmas Fermentation Workshop could be your ticket to flavour town this year.
Taking place on December 4th at L’atitude on Union Quay, the special edition workshop is being run by Linda O’Flynn and Ivo Duarte, the power duo behind Terra Ignis, a fermentation food company based in the English Market.
Linda worked as a bartender in Cork for 11 years, developing award-winning cocktail menus in Cask, while Ivo has been a chef for 11 years and has worked on both organic and biodynamic farms.

Along with making and selling their own delicious ferments — their kimchi is next level — they also want to share their secrets and recipes through their workshops.
Their demo on three Christmas-focused ferments will include how to make cranberry sauerkraut, sour cherry mulled wine fermented soda, and fermented crispy potatoes (see you later standard roasties).
Those attending can take away everything they need to make all dishes at home.
