Heading out on the alfresco lunch trail?

Toast Pantry & Coffee Bar is now serving gourmet grilled cheese toasties and Clonakilty’s Stone Valley Coffee Roasters coffee from 11am – 4pm, Thursday to Saturday, on The Olde Faery Trail in Ballinlough Park.

Run by seasoned Actor, Sebastian Thommen, who starred as Michael Collins in RTE’s TV drama, ‘Rebellion’, every little detail has been carefully considered- even down to how Toast’s drinks will be served.

Toast brews will be handed out to customers in 100% compostable cups adorned with prints of Sebastian’s very own Cork-inspired watercolour creations.

“It’s been a long time coming, with way more hoops to jump through than I would ever have imagined, but finally we’re here, and I’m so excited to serve all the people that have shown such an interest and support over the past year since this mad idea was first conceived!” said Sebastian.

Here’s what’s on the menu: 

• The Tom Durcan – Tom Durcan Spiced Beef with Toons Bridge Dairy Smoked Scamorza, Italian mozzarella and finely chopped spring onion
• The Three Cheese – Smoked Toons Bridge Dairy Scamorza, Macroom Buffalo Mozzarella, Gubbeen Farmhouse Cheese and finely chopped onion
• The Ham & Cheese – Rosemary ham, Smoked Toons Bridge Dairy Scamorza, Macroom Buffalo Mozzarella and finely chopped spring onion
• The Feta – Ardsallagh Goats Feta, sun-dried tomato, and garlic pesto.

All these fillings are lovingly sandwiched in between slices of artisan sourdough from local baker Declan Ryan’s Arbutus Bread, with each toastie served with a choice of Toast’s own Roasted Garlic Mayo or Ballymaloe Relish.

Yum.

As well as having a home three days a week in Ballinlough Park, once lockdown restrictions are lifted Toast will also be available for private hire for catering gigs and events, with the flexibility to also operate as a mobile bar for Pimms/Champagne receptions at weddings.
