Chef Dan Relihan’s new spot Soul is *the* place to eat this weekend

By Katie Mythen-Lynch July 4, 2025July 4, 2025

Opening day was a roaring success.

Now Cork’s newest southern-inspired kitchen is gearing up for a busy launch weekend on Washington Street in Cork City Centre.

With Head Chef Dan Relihan at the helm, SOUL is serving up an outrageously delicious menu featuring Chicken or Pulled Pork and Cornbread Waffles, Brisket Sliders and (wait for it) Pancake Battered Bacon.

The latter involves smokey bacon strips encased in pancake batter, drizzled with bourbon maple sauce and topped with smoked candied pecans. I mean, sign us up right now.

A fine choice for brunch, your can try The Pig and the Hen: Crushed potato cups filled with smoked apple purée, layered with black pudding and poached eggs, then topped with smoked butter and mustard hollandaise. The Kimchi Cakes are also calling your name; those are soft poached eggs infused with turmeric and served on kimchi potato cakes coated in sriracha hollandaise.

Take all my money.

They also do Oak Smoked Salmon Poached Eggs and a House Smoked Salmon Salad for anyone interested in keeping things light and veggies are well catered for with a Trio of Pulled Jackfruit Sliders served on toasted brioche mini buns with mixed leaves and pineapple salsa.

If you have room for dessert you can also get your fresh pancakes topped with rum-glazed banana and berries or chocolate and whipped cream. Naturally there’s a Smoked Pecan Pie served with white chocolate ice cream, a vegan Carrot Cake topped with coconut icing and orange zest and a Snickers Cake with whipped cream.

‘Get the wedges’

“Went there today and MY WORD. Words cannot express how amazing the food was!” fan Dylon Friend commented on Instagram.

“Make sure to get the sweet potato wedges with whatever main you get.”

Lynda Sullivan, who also visited yesterday, agrees: “Went in at lunch time today. Food was amazing, made with great care and bursting with flavour! Will defo be going back.” she posted.

SOUL, 37 Washington Street, Cork City is open 8am until 5pm daily and it’s walk-ins only.
