Marco’s imminent success began when he went to London as a teenager to train in classical French cooking with Albert and Michel Roux at Le Gavroche. He later went on to work with iconic French foodies Raymond Blanc and Pierre Koffmann.
By 1999 Marco had achieved everything a chef would endeavour to become and finally hung up his apron, retiring from the kitchen.
These days he is dedicated to rolling out his restaurant concepts, which focus on delivering good, quality food at affordable prices.
Tickets for the Festival of Food at Ballymaloe are available from €13.25 here.
