A popular Kinsale coffee shop reopens today under new ownership

By Yay Cork November 1, 2025October 31, 2025

The coffee will be brewing from 8am.

The Collector Coffee Shop on Market Lane in Kinsale reopens today under new ownership.

Original owners Shannon and Michael Healey, from Florida, have passed the reins over to Federica Pesenti and Jim Hancock who chanced up on Kinsale while on holiday over the summer and fell in love with the vibe.

“A bit of magic and here we are, taking over The Collector.” Fedi told us.

“We’re going to keep focusing on details and quality while making it our own, introducing fresh daily sandwiches and baking sweet and savoury treats. We’ll gradually grow into evening service with wine and cocktails down the line.”

Shannon wished the new team all the best with the handover:

“The decision to pass the business on was not made lightly. We feel incredibly fortunate to have found the right people to take The Collector forward, and there’s been a real sense of kismet in how it all came together.” Shannon posted on Instagram.

“For Michael and me, opening the shop has been the realisation of many lifelong dreams and “what-ifs.” This gem has been so much more than a coffee shop: it’s been a playground for experimentation, a space for meaningful connection, and a showcase for craft in all its forms. THANK YOU for being part of our journey and making these years unforgettable.”
