A brand new market stall is bringing the fanciest baked potatoes ever to Cork

Fire-cooked. Fully loaded.
That’s the tasty premise behind Spud Hut, the brand new street food concept landing at the buzzing The Black Market in just a few weeks’ time.
Created by chef Simeon Stanev, this slick new lunch-and-dinner spot puts the humble potato front and centre — where the spud is the headline, not the side.
Here’s how it works: choose your base (jacket potato, potato waffle, or tater tots), build your dream loadout, and crown it with one of their signature HUT sauces.
We had a sneak peek at the menu and it looks delicious, we’re talking Tokyo Yakuza, a homemade Japanese chicken curry sauce with serious heat, the Louisiana Screamin’, crispy chicken tossed in HUT hot sauce, The Big Poppa — 12-hour slow-cooked brisket with sweetcorn salsa and HUT Birria and The One and Only — slow-cooked pulled pork with crispy onions and house “Conspiracy” sauce.
You’ll also find classics like beans and cheese, tuna options, and a full HUT Sauce arsenal including curry, hot sauce, garlic mayo and more.

“The brand is rooted in bold flavour and 90’s hip-hop street culture, black visuals, fire accents, strong identity. It’s built to feel like a proper urban food brand, not a typical takeaway. We chose the Black Market as our first location because it already has culture and movement.” Stanev told Yay Cork.
“It’s not a generic food hall, it has personality. Spud Hut belongs somewhere with that kind of raw energy.”
Keep an eye on their socials for a launch date in the coming weeks.
