Cork two-Michelin-starred chef Ahmet Dede is bringing Baltimore to Dublin

By Yay Cork May 15, 2026May 19, 2026

This’ll be a hot ticket.

Two-Michelin-starred chef Ahmet Dede of Dede at the Customs House is bringing the unique flavours of the Cork coast to the big smoke this summer.

Dede, freshly crowned ‘Best Chef in Ireland’ at the Restaurant Awards, joins Alex Zhang, head chef and co-founder of award-winning Michelin Guide restaurant BIGFAN, at Sister 7 in Fidelity Studios for The Silk Road — an eight-course collaboration exploring the connections between Turkish and Chinese cuisine, on June 8th.

A one day only event with two sittings, just 50 guests will be seated per service, all enjoying eight fabulous courses.

Chefs Ahmet Dede and Alex Zhang first met while working together at Chapter One in Dublin. Now as chef-owners, each with a distinctive voice shaped by time, place, and personal experience, they’ll be reuniting for one memorable evening.

The sea plays a central role in this exchange: “Ahmet draws from his life in Baltimore, and Alex brings the influence of Dalian, his hometown in Northern China renowned for its seafood and coastal food culture. Both chefs share an instinctive connection to the sea, a defining thread throughout the menu.” say the organisers.

“And this is an exchange, not just a collaboration. Ingredients will move between the two kitchens: foraged coastal elements from Baltimore will be explored in Dublin, while aged ferments, honey from the BIGFAN hives, and repurposed elements from Fidelity partners Whiplash Brewery will travel south, in a sharing of resources, ideas, and process.

“Expect something deliberately different. What arrives at the table over eight courses will be bold, generous, and full of impact. Dumplings will happen. Kebabs too. Noodles might show up. Dessert definitely will, but maybe not how you expect.”

Tickets for each sitting of Dede x Sister 7 are €195 per person for eight courses and a welcome drink, with an add-on cocktail and wine pairing of Turkish wines for €72. They go on sale on Friday, May 22nd at 12pm and will be available to purchase from eventbrite.ie.
