A cult New York bookshop had high praise indeed for a Cork restaurant’s cookbook

By Katie Mythen-Lynch March 4, 2024March 3, 2024

“Enticing.”

That’s the word that the esteemed Kitchen Arts & Letters cookbook store in New York used to describe the new Paradiso cookbook by world-renowned Cork chef and author Denis Cotter.

With a foreword written by none other than Oscar-tipped Cork actor and Paradiso fan Cillian Murphy, Paradiso, Recipes & Reflections is a celebration of the unique cuisine of the iconic Leeside restaurant, which has been wowing veggies and non-veggies alike for 30 years.

Throughout the book, there are essays by the author and founder-chef of Paradiso, Denis Cotter, illuminating how the cuisine of Paradiso has become its own unique living thing.

Now Kitchen Arts & Letters, a cult Big Apple store that has been a must-visit for foodies since 1983, is the latest to heap praise on the tome.

“This new book from a renowned vegetarian restaurant in Cork City, Ireland is imaginative and handsome without taking itself too seriously,” they said.

“The cooking is sophisticated and the recipes are presented much as they would be executed in the restaurant, broken down into components which are then assembled shortly before serving.

“If that sounds daunting, please keep in mind that there is an abundance of interesting ideas here which you can pluck out and use as you like.

Among their favourites were the eggplant with black sesame yogurt, zhoug, and fried caper, the nettle-polenta gnocchi with maple-glazed king oyster mushrooms and pickled garlic scapes, the chilli-glazed tofu in coconut tamarind broth with pak choy and crisped vermicelli and a mouthwatering blood orange posset with beet-dusted meringue.

“Vegan options are abundant and recipes are provided for making nut butters, cheeses, and creams,” they added.

“Enticing.”

With wonderful photography by Ruth Calder-Potts and timelessly beautiful design by John Foley of Bite Design, Paradiso Recipes & Reflections is published by Nine Bean Rows and available to order (€39) here.
