5 Cork spots that are doing fabulously fancy things to the simple sandwich

We’re always on the lookout for what’s hot and happening in the world of things nestled between (or atop) two slices of bread and happily, Cork chefs and sambo makers never fail to come up with the goods each season.
Here are five edible masterpieces to order in Cork this week:
1. The sandwich special at Pickled
You literally can’t go wrong with the sandwich special at Pickled Deli in Macroom.
You can happily leave your lunch order in the hands of Katy Walsh and Keely Buckley and expect to be handed something as utterly delicious as this slow-cooked curried lamb shoulder, mint yogurt, onion bhaji, and green chili Arbutus bap.
They’re currently on a short holiday but they reopen on August 30th. Join the queue from 8.30am.

2. The Open Salmon Sambo at Good for the Soul, Ballincollig
In this delightful creation, smoked salmon, lemon and dill cream cheese, house pickled cucumber and local leaves are perched atop some oven-warm treacle soda bread and served with a side salad, house dressing, and pickled onions.

3. The Bánh Mì at Meb’s Veg
The awesome little plant-based food truck makes the freshest bánh mì we’ve ever tasted using marinated tofu from OTOFU, homemade bread, pickled things, fresh cucumber and coriander, and an unctuous sweet and spicy mayo. Catch them at Mahon Point Market, Thursdays, 10am – 2pm, and Douglas Market, Saturdays, 10am – 2pm.

4. The Toasties at Aye
Aye has turned the traditional toastie into a whopper assembly of meats, cheeses, and veggies, all nestled in the carb-laden embrace of thick doorstep bread. You won’t know whether to kiss it or eat it. Head for Anglesea Street and see what happens.

If you’re extra particular about your sandwich toppings and you like to supervise as each layer is added, The Workshop in Ballygarvan are way ahead of you. Their Tapas Salad involves a board of delicious locally sourced meat, cheese, and salad leaves with a selection of relish, a dollop of pesto, and some fresh Arbutus multigrain bread so you can build your own exactly to your liking.
