Cork vegans are raving about this restaurant’s fish-free Vish and Chips

It’s not easy being vegan.
Even the best home cooks and creative eaters feel the occasional pang of yearning for the comfort food classics… and one Cork restaurant is serving up a proper treat.
Eco’s ‘Vish and Chips’ are earning a solid following in Cork’s vegan community. The Marina Market stall has come up with a convincing, golden-crisp take on the chipper favourite, but fish-free.
Instead they use Otofu, an organic tofu handmade made in Ballylickey, West Cork. Tofu is super versatile and can be fried, baked, scrambled, grated, minced or simply added to soups and sauces.
Vegan blogger Elena of Vegan in Cork is a big fan, sharing the dish in her feed: “Made with @otofu.ie and seaweed, coated in a gluten-free batter, and deep-fried. It comes with a mountain of fries and vegan mayo.
“The portion is super filling.” she added.

“I had this twice over Christmas! Soooo good!” added one delighted fan.
Add a squeeze of lemon and a dollop of ketchup and you’re good to go.
