It’s empanadas and margaritas at this South American pop-up in Clon

This. Sounds. Amazing.
Get ready to embark on a culinary adventure this weekend as local Clon bar, Craft & Co. transforms into a pop-up empanada haven (with margaritas to boot) this Friday, December 8th.
From 5pm to 9pm (or until they fly off the shelves), the West Cork bar will be taken over by the culinary genius Caitlin Ruth, a local champion of sustainable food.

Caitlin Ruth, chef, and Elaine Blackwell of Deasys.
Caitlin told Yay Cork that she’s planning on doing different flavours, wrapped in her favourite white wine and butter pastry.
Say no more.
The empanada extravaganza boasts an eclectic line-up, featuring choices such as duck confit picadillo; oxtail and O’Neill’s black pudding; pulled lamb and chipotle; aubergine pibíl; and pumpkin and lentil.
Each plate, a steal at €15, comes complete with two empanadas, hot black beans, and an array of sides that will have your taste buds doing a salsa dance. Indulge in delights like purple potato salad made with purple rain potatoes from Timoleague Vegetables, citrus slaw, salsa, crema, and more.
Gluten-free and vegan options are also on the menu.
And to top it all off, we have it on good authority from Caitlin herself that Craft & Co. will be shaking up refreshing margaritas and hard Agua Frescas (rhubarb and hibiscus with spirits).
Craft & Co. is becoming well-known for its dynamic food pop-ups, having previously played host to culinary maestros like Mark Jennings, formerly of the much-loved Pilgrims Restaurant in Rosscarbery; and award-winning Christopher Braganza who runs the Spice Genie food truck. Keep an eye on their Instagram page for their weekly pop-up offerings.
Looks like Clonakilty is eying up Kinsale’s crown as the gourmet capital of Ireland.
