With a smart, fresh facade, a new lunch spot opens just in time for festive catch-ups

There’s a new addition to the Café Gusto and Liberty Grill family.
Probys Kitchen has now opened with a fresh new look and expanded culinary offering.
Under the new ownership of Marianne Delaney and Denis O’Mullane from the acclaimed Café Gusto and Liberty Grill, alongside Pat Browne, formerly of Ballymaloe Cookery School, the Probys Quay eatery has undergone a gorgeous makeover. The new restaurant is where La Dolce Vita once was.
Led by this dynamic trio, Probys Kitchen had been running weekend brunch from its outdoor terrace, Proby’s Garden, since the summer.
Now, with the launch of its revamped interior, the restaurant is open daily from 8am for breakfast, with brunch available at weekends from 11am and lunch on weekdays from noon. They hope to extend the culinary offering to dinner in the new year.

Situated in the picturesque surroundings shadowed by Elizabeth Fort and Saint Fin Barre’s Cathedral, Probys Kitchen aims to be a go-to spot for Corkonians seeking a delicious dining experience.
The culinary vision at Probys Kitchen aligns with the commitment to fresh, seasonal, and healthy food found in Marianne and Denis’ other renowned establishments. Moreover, the team’s shared passion for a sustainable future is reflected in their menu choices that support sustainable food sources and practices.
Diners can expect a menu filled with delights, featuring whole grains, pulses, beans, and an abundance of vegetables. There will also be an emphasis on superior quality in their meat and fish selections.
“We make all our stocks in-house, so we will always have a broth on the menu,” Marianne told Yay Cork. “To start off, our first menu, we have an Asian chicken broth, with free range chicken, egg noodles, vegetables, and a soft-boiled egg, as well as a grain salad and hot bowls.”
Among the enticing offerings are dishes like wild mushroom pappardelle with crispy lemon crumb, and for breakfast, there are options like The Merry Mill organic porridge, gluten-free homemade granola, and a selection of hot breakfast dishes. The menu caters to both dine-in and take-away preferences.
