1. Mushroom Rayu Toast at Good for the Soul

A savoury explosion of sautéed garlic mushrooms and kale on Ryan’s Arbutus sourdough, Good for the Soul’s Mushroom Rayu Toast is topped with their banging house peanut rayu.

2. Turkish Poached Eggs at Cafe Gusto
Washington Street, Cork City
A new addition to the weekend breakfast menu, Gusto’s Turkish Çılbır, pronounced chil-bir, is basically poached eggs on toasted sourdough, served over a bed of delicious garlicky yogurt and finished with a generous drizzle of warmed spicy butter with a good dash of Aleppo pepper.
Delicious, comforting, and topped with fresh dill, mint, and pine nuts.

3. The Rhubarb Pancakes at Good Day Deli
Nano Nagle Place, Douglas Street
Spring has sprung at Nano Nagle Place; the organic poached Cork Rooftop Farm Rhubarb Pancakes are back on the menu.
Order them with a dollop of vanilla mascarpone for added ‘Mmmmmmmmmm’.

4. The Wafflehoff at Lab 82
Lower Glanmire Road, Cork
It’s a heck of a way to start the day. Lab 82’s Wafflehoff (€15.90) involves a pair of Belgian sugar waffles topped with buttermilk fried chicken, crispy bacon and drenched in maple syrup.
No wonder it’s their signature dish.

5. The Breakfast Flatbread at Naturally Nourished
Penrose Wharf, Cork City
Healthy, filling, and utterly delicious, the NN flattie (€9.50) is one of our favourite things to eat at this popular spot. Their house flatbreads come topped with labneh, free-range poached eggs, pul biber chilli oil and fresh herbs.
